This is a great meal to pack up and take with you. If you have the hummus made ahead of time, the prep involves just washing and cutting the veggies and rolling up the wraps.

Hummus – Collard Wrap
Use your favorite hummus here for a transportable treat.

Ingredients
- 6 ounces hummus
- 2 leaves collards ~2 ounces
- 4 ounces veggies cucumber, tomato, grated carrot
- 1 tbsp flax oil optional
Directions
- Wash collard leaves and cut stem out leaving each leaf cut into two long pieces. Weigh. Should be about 2 ounces.
- Spread 1/4 of the hummus over each wrap. (6 ounces for male, 4 ounces female)
- Cut up veggies and weigh out enough to equal 6 ounces total veggies when added to the weight of the collards.
- Add 1/4 of the veggies to each wrap.
- Roll ‘em up.
Detailed Instructions
The wraps are made from collard leaves. Choose nice big ones. Collards are usually surprisingly tender and yummy despite their size and thickness. Each wrap is made from 1/2 of a large collard leaf. The stems are too thick and brittle to roll so You slice the leaf longwise, cutting the stem out completely.
Weigh out the 3 to 4 wraps that you will be using. Then cut up some cucumber and tomato and weigh them to total your 6 ounces of veggies. Also, weigh out your 4 ounces (or 6 ounces for a male) of hummus. If you are using your oil allowance on the wraps, weigh out a 1/2 ounce of flax oil.
Now, lay your leaves out on a big plate or cutting board. I find that 4 ounces of hummus can make 3 or 4 wraps, depending on how much hummus you put on each leaf. Put a spoonful of hummus on the wrap and spread it out. Then add some chopped up cucumber and tomatoes. You can sprinkle on some paprika now and if you want to use your oil allowance on the wraps, add a bit of flax oil to balance the omegas. The wraps are delicious with or without the added oil.
Start rolling from the bottom. When all rolled up, rest the wrap with the loose flap down. Hold these with two hands to eat as the ingredients sometimes want to jump out – especially if you are using a lot of hummus on each wrap.
